PASTA ALLA NORMA aka EGGPLANT PASTA


Hello, dear friends~

Today I will share a simple and easy recipe, especially if you want something different from the popular pasta you tried. I will list the ingredients you need and just a disclaimer the recipe I'll put here is what I have in our kitchen and this will be my version of the eggplant pasta.

Ingredients:

shallot or white onion

garlic

salt

pepper

cooking oil

eggplant

tomato paste 

tomato sauce

any kind of pasta you like

 

Direction:

For me it’s better to cook the pasta first before the sauce, Once the pasta is cooked set aside, slice the eggplant so as not too think or too thin, then fry it, and once cooked set aside. 

In the same pan sauté shallot and onion then add tomato paste and tomato sauce let it simmer, then add pinch of salt and pepper, add a cup of pasta water then let it simmer for at least 5 to 7 minutes.

Add the fried eggplant and pasta and mix together, then its ready to serve, you can add cheese, fresh basil and chili flakes when you do the plating.

I only learned and been inspired on the recipe on the video that I had watched on TikTok I’ll put the link here, so you can also check it out. I was surprise with the flavor as it was much more lighter and not heavy.
